Description
The House of Champagne Bollinger was founded in 1829 in the village of Aÿ, in the heart of the Cham-pagne region. Famous for its use of Pinot Noir and oak ageing techniques, the Bollingerwines are defined as much by the vines and the terroir as they are by the art of their blending and vi-nification. Sustainability and organic principles are key to the House’s philosophy, with Bollinger the first Champagne House to be awarded the Haute Valeur Environmentale certification. The quality and quest for perfection for which Bollinger is renowned was recognised by the Court of England when, in 1884, the House was the first in Champagne to be awarded a Royal Warrant, which it has held ever since. Bollinger also has several iconic partnerships. In particular, as thepreferred champagne of James Bond, celebrating 40 years of the partnership in 2019. The House is also the official champagne supplier of England Rugby and supports the Bollinger Everyman Wodehouse Prize, an annual literary award for comic writing
Tasting Notes
A bright rosé with subtle golden hues. Aromas of red berries hints of red currant, cherry and wild strawberry and a spicy touch which is not unlike Bollinger’s Special Cuvée. The pallet hosts a subtle combination of structure, length and vivacity, with a tannic finish due to the added red wine which also brings flavours of red berries.

French 75 Recipe
We've all been there. You receive a bottle of sparkling wine as a gift and it's fair to say you're less than impressed. If that's you, you might be looking for a quick and easy cocktail to transform your fizz into a sweet and zesty delight. The bonus is, it's a super simple recipe with just 4 ingredients, so it's the perfect quick win to impress guests. Gin AND fizz?! In one cocktail?! Hell yes to that. The classic French 75 brings two of our favourite bevs together in one drink, and you can swap champagne for any sparkling wine. The French 75 is a classic, a drink that dates back to World War I. How's this for a fun fact? The cocktail is named after a 75 millimeter wartime field gun - but hey, we know you're not here for a history lesson. Keep reading for how to make the iconic cocktail.
