Ingredients

  • 60 ml of White rum
  • 30 ml of Coconut rum
  • 30 ml of Lime juice
  • 30 ml of Simple syrup/Cane sugar
  • 30 ml of Pineapple juice = 2-3 pineapple chunks
  • 4-6 Fresh Mint leaves
  • Crushed ice
  • Roasted Coconut flakes (optional)
  • Pineapple slices and Mint sprigs to garnish

Method

    1. Prep the serving glass – Rim the serving glass with roasted coconut by brushing simple syrup along the rim and dipping it into roasted coconut flakes. Set aside.  (Optional)

    2. In a cocktail shaker, gently muddle the fresh mint leaves and pineapple chunks to release their oils and flavors.

    3. Add white rum, coconut rum, fresh lime juice, and simple syrup to the shaker.

    4. Shake vigorously for about 15-20 seconds. This will chill the mixture and blend the flavors.

    5. Fill the serving glass with crushed ice.

    6. Strain the Mojito mixture into the glass over the fresh crushed ice.

    7. Give it a gentle stir.

    8. Garnish with pineapple slices and a sprig of mint.
