In 2008, Balcones was nothing more than an idea driven by a passion to create something original and authentic, right here in the Heart of Texas. It all started in an old welding shop under a bridge in Waco. For the next year, we replaced the roofing, knocked out walls, laid brick, cut pipes, installed copper pot stills from Portugal, and shoehorned a whisky distillery inside that quaint building. Proud of what we had accomplished on our own, we began distilling in 2009.

Corn Whiskey Old Fashioned Recipe
The Old Fashioned is one of the OG whiskey cocktails in modern record, thought to be developed way back in the early 1800s. Though there's too many modern variations to count, the classic Old Fashioned is understood as a simple combination of whiskey (usually bourbon or rye), sugar and aromatic bitters. So what's different about this version of the classic whiskey cocktail? Stories of corn whiskey or ‘corn liquor’ run deep in the United States. Often corn whiskey was associated with the illicit whiskeys produced as Moonshine during Prohibition and has developed a reputation as wild as those lawless times. Today corn whiskey is still the only type of whiskey that does not have to be aged in an oak container, and straight corn whiskey does not have a very defined profile. With either bourbon or corn whiskey, you're bound to enjoy this delicious take on the old fashioned.
