White wine is a refreshing summer drink, and as well as pairing perfectly with seafood, it’s also great for steaming mussels, clams, or even artichokes and mushrooms. You can make anything taste better with a little garlic and wine. It’s a fact. This recipe is not only supremely simple, but also pretty damn decadent.

INGREDIENTS

  • 60 ml unsalted butter
  • 120 ml chopped scallions
  • 6 cloves minced garlic
  • 1360 grams little neck clams 
  • Juice of 1/2 lemon + 1 extra lemon for grilling
  • 240 ml dry white wine
  • Handful of chopped parsley + some for garnish
  • 120 ml heavy cream
  • Parsley for garnish
  • Bread for dipping!

METHOD

  1. Prep the clams: Clean the clams by soaking them in cool water for 20 minutes to remove any sand. Scrub them with a rough sponge or brush under running water to remove any debris. If purchased, ask the market if the clams need any additional scrubbing.
  2. Prep your other ingredients: Place butter and chopped scallions in a skillet. Place minced garlic in a separate bowl. Combine wine, lemon juice, and parsley in a glass or bowl. Place cream in its own bowl. Gather bread, lemon halves, oven mitt, and spatula.
  3. Cook it: Preheat the grill to medium-high heat. Add the skillet to the grill and sauté the scallions until soft and fragrant, stirring occasionally for about 5-8 minutes. Add the garlic and cook for another 3 minutes until lightly browned. Pour in the wine, parsley, and lemon juice mixture. Place the clams on top and close the grill to allow them to steam. Cooking time may vary, but it usually takes about 15 minutes for the clams to open. Check on them occasionally.
  4. Toast the bread and grill the lemons: Place the lemon halves face down on the grill and bread slices on the high rack, toasting them for about 5 minutes before removing the skillet from the grill.
  5. Finish it off: Stir in the cream to the cooked clams. Serve the clams with toasted bread, grilled lemons, and garnish with parsley. Enjoy!
