INGREDIENTS

For the Sourdough Beer Bites:

  • 1 ½ cups sourdough starter, unfed
  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp garlic powder
  • ½ cup grated Parmesan cheese
  • 1 cup beer (lager or ale for best flavor)
  • 2 Tbsp unsalted butter, melted

For the Beer Cheese Sauce:

  • 2 Tbsp unsalted butter
  • 2 Tbsp all-purpose flour
  • ½ cup milk
  • 1 cup beer (same as used for the bites)
  • 2 cups sharp cheddar cheese, shredded
  • 1 tsp paprika
  • Salt and pepper to taste

METHOD

  1. Prepare the Bites:

    • In a large bowl, mix together the sourdough starter, flour, salt, baking powder, garlic powder, and Parmesan cheese.
    • Gradually add the beer and melted butter to the dry ingredients, stirring until a soft dough forms.
    • Turn the dough out onto a floured surface and knead lightly. Roll the dough into a rectangle, approximately ½ inch thick.
    • Cut into bite-sized pieces, and place on a baking sheet lined with parchment paper.
    • Bake in a preheated oven at 425°F (220°C) for 15-20 minutes or until golden brown.
  2. Make the Beer Cheese Sauce:

    • In a saucepan, melt butter over medium heat. Stir in flour to create a roux, cooking for about 1 minute.
